Ingredients:
6 large red potatoes
6 oz. bacon
1/4 cup diced celery
1/4 cup diced onion
1/2 pound lump crab meat
1 1/4 cup low fat mayonnaise
1 tsp. garlic salt
1/2 tsp. black pepper
1/2 tsp. dill
1/2 tsp. thyme
1 Tbsp. lemon juice
Make Dinner:
Pierce potatoes with a fork 5-6 times each. Microwave potatoes on high heat for 5-6 minutes until soft throughout.
While potatoes are cooking, chop bacon into small "bits". Sauté bacon in a medium sized skillet over medium high heat until crisp, about 6 minutes. Remove from heat and drain bacon pieces on paper towels.
Chop potatoes into 1/2 inch cubes. Place potato pieces, crisp bacon, diced celery, diced onion and crab meat in a large mixing bowl. Mix gently. Add mayonnaise, salt, pepper, dill, thyme and lemon juice. Use a tablespoon to gently stir mixture until evenly combined. Refrigerate until ready to serve.
